We’re in the last days of January and there are a few days left in February which is also called Valentine’s Month. Valentine’s is the month of love and I love to make desserts around this month.

Valentine comes with a lot of red velvet desserts and recipes. I want to share my favorite red velvet dessert with you all which is – red velvet cupcakes. These are perfect recipes for red velvet cupcakes and these are so soft and fluffy you will love them.

About the Flavour of Red Velvet Cupcake

In my opinion, red velvet cupcakes are incomplete without cream cheese frosting. Cream cheese frosting is a blend of cheese and sugar, and it tastes perfect with red velvet cupcakes.

These homemade red velvet cupcakes are my favorite desserts for feeding guests. They are quick, easy to make, and mouth-melting. Don’t save these delicious cream cheese frosting cupcakes just only for Valentine’s, these are great for Christmas, birthdays, or anniversaries.

 Red velvet brings a smile to people’s faces. Whether we are eating red velvet cake, cupcake, muffin, waffle, or any other dessert, you’ll notice that red velvet has a light chocolate flavor, which is why it contains a little cocoa powder. The taste of red velvet also includes some acidic flavor. The acidic flavor is achieved by mixing the buttermilk in the batter of any red velvet.

 Now how can buttermilk be prepared? We need just two things to prepare the buttermilk: milk and vinegar just mix these two things and let the milk curdle. The curdling makes the flavor acidic and forms the buttermilk which makes the texture moist.

With the slightly acidic flavor of red velvet desserts. The cream cheese is also slightly acidic. This is why red velvet with cream cheese frosting is such a deadly combination and very well blended. Adding cream cheese frosting to your red velvet desserts makes a perfect dessert to create a mouthwatering feel. This i the reason I always make cream cheese frosting with red velvet desserts.

You will need special ingredients to make this recipe. Let’s look at the ingredients required to make red velvet cupcakes with cream cheese frosting, which would be a perfect match for Valentine’s Day.

  • Eggs – Eggs are considered to be a major source of protein. It helps to thicken and smooth the batter of cupcakes.
  • Sugar- Besides adding sweetness, granulated white sugar makes cupcakes browner(by caramelizing).
  • Vanilla Flavour- It helps reduce the smell of eggs in the mixture and adds a good flavor.
  • Flour—Depending on its ratio to the other ingredients in the mixture, flour makes the cupcakes’ texture good and crumbly.
  • Baking Powder- It helps to create bubbles within the batter resulting in a fluffy texture.
  • Cocoa Powder- we’ll add a small amount of cocoa powder to give a rich chocolate flavor.
  • Oil-It helps to create a moist and tender texture to the cupcakes which helps in retaining the moisture throughout the making of cupcakes.
  • Buttermilk- Buttermilk when reacted with the powder helps to create a fluffy texture and helps the batter to rise.

Steps to Make Valentine Special Red Velvet Cupcakes

Before starting to make the delicious cupcake batter we’ll have to first preheat the oven to 180*c and line a standard muffin tin with liners. Once that is done we can make the batter by following these steps :

  •  In a bowl, take the eggs and slowly add sugar to it. Beat well for 2-3 minutes.
  • Add vanilla flavor to the mixture.
  • Add all the dry ingredients(flour, baking powder, cocoa powder), and stir by cut and fold method into the mixture.
  • Slowly add oil to the mixture.
  • And add red color as per your requirement. Add the buttermilk into the batter & gently mix with the batter.
  • Pour the mixture into prepared cupcake liners and bake for 20-25 min or till a knife inserted comes out clean.
  • Place the delicious red velvet cupcakes on the wire rack to cool down.

How to Make Cream Cheese Frosting

  • Take cream cheese in a bowl, add icing sugar over it mix it well.
  • Add whipped cream to the mixture 
  • Red velvet icing is ready for your cupcakes.

Decorating the Cupcakes

  • Use a spatula to spread the cream cheese frosting on the cupcakes.
  • Shift the frosting in a medium-length piping bag and use the nozzle of your choice to decorate the cupcake. Well, my favorite is star nozzle or star tip.
    We can also decorate the cupcake by first spreading the frosting on the cupcake and then placing the red velvet crumbs.
  • We can also use the sprinkles to make it more beautiful. As this is a red velvet cupcake we can use pink or red sprinkles.

Some Important Tips While Making the Red Velvet Cupcake

  1. In the case of red velvet cupcakes, never skip the buttermilk—it contains just two ingredients: milk and vinegar. You just need 5 minutes of patience while making the buttermilk. If you do not have vinegar, you can replace it with fresh lemon juice.
  2. Don’t fill the cupcake liners if we do so the butter will come out of the liners.
  3. Ensure you preheat the oven at the required temperature before baking the cupcakes.

The cream cheese frosting can be made and stored in an air-tight container for about 1 week and if we store it in the freezer it can store for 3-4 months.

These red velvet cupcakes are a part of the cake and can be stored up to 3-4 days in the refrigerator.
